Well, as of right now...on top of the things explained in the beginning of the game...it determines what type of enemy it will be strong against. Aside from that, it's really just a matter of preferrence until a little later into the game where the Last Stand abilities come into play.
But let me see if I can answer that a little better:
If you pick polearms, you'll be kind of in the middle of bladed and bludgeons. But here's the catch, although polearms will be effective against some undead due to it's weight...it won't be effective on ALL undead, whereas bludgeons would. Bludgeons will also allow you cross several obstacles throughout the game that would otherwise be unpassable with any other weapon class because you can crush the obstacles in the way. Prizes will vary. On the other hand, if you go with bludgeons, you won't get the added defense that polearms offer. Aside from affecting SOME undead, polearms will also be effective against SOME enemies that bladed will be strong against...like flesh creatures and your typical monster/boss type thing. Now, going with missiles obviously has it's advantages...as you can see you can hit them before they get close enough and therefore you ALWAYS have initiative. This is particularly useful since some missiles are designed to hit all enemies as you may have seen...my personal fav is the slasher. Although missiles are generally only useful against wandering enemies as they often do not hold that much power against bosses...this will become apparent as the game goes on. Missles are also killers when in a place with enemies that attack with a cluster of flying baddies. Now, bladed are generally useful in any situation because there really won't be enemies that have any resistance to them...meaning all their resistances to bladed are set to normal instead of some having stronger resistance to the bladed attribute. That added to the fact that there are enemies with natural weakness to bladed weapons.
To top all that off, there will be certain sidequests/cutscenes/events that you will only be able to trigger depending on what weapon (not weapon category) you have equipped. These will not be hinted on...and you will have to be perceptive to detect these things. For example, you go on a rooftop and you see a shiny object hanging on a tree. That's all it will say. If you have a bow, only then will it offer you the option to shoot the item. That's just an example though. Also, when dealing with dungeon puzzles, some weapons may offer you easier access to certain things as opposed to taking the detour (like bludgeoning an obstacle, or shooting a switch instead of walking all the way around to get to it).
