I adore Danny Elfman's film scores, as well as Williams'. I think Elfman's just grab the title from me due to a certain eccentricity to his music. Plus, Williams was never in a group called Oingo Boingo =D.
If we're speaking classical composers, then I'm afraid I don't have much of a clue, as I haven't heard enough to differentiate pieces of music from separate composers. It all sounds nice, though.

Danny Elfman is good, but his stuff isn't really up to John William's standards. Plus he has done music for lots of crappy movies such as The Hulk which really makes him less impressive. (The quality of the movies sort of gives a big impression on the music)

Hmm, not sure, John William's songs all seem rather the same. Maybe with differing notes during the chorus.

Nobuo Ueamtsu. I also like Yasunori Mitsuda (or however you spell his name), but all of his music is the same.

Nobuo Uematsu... no doubt in my mind... any FF track sounds great. And maybe some Kingdom Hearts tracks, but I don't know if he composed them, someone else might've... but ah, what the hell. It's still Squaresoft. Any music from them sounds excellent.

Yoko Shimomura composed the KH Soundtrack. The same composer did Street Fighter 2 and Parasite Eve 1, apparently.
I liked the rearrangements of Disney themes, especially Winnie the Pooh (don't laugh!) and This Is Halloween, and I liked the various versions of Hikari, but I didn't find the rest to be too good. Elfman and Uematsu still stand as my faves.
EDIT: And she did Super Mario RPG's OST.

I like Yoko Kanno, she composed for Cowboy Bebop, and Escaflowne among other anime scores. Kajiura Yuki is a fantastic composer, she composed for several anime and RPGs, namely Noir and .Hack. Iwasaki Taku is another I enjoy very much, his music is very dramatic and often heightens action scenes to greatness. He composed for Get Backers and some other animes.
