Kay, I figgered we needed one of these. Just list which animes/mangas you watch/read and enjoy, and if you choose to, list why as well.
I'll start with mine.
Fruit's Basket- This is really cute and really funny. It starts out kinda weak but soon enough I was sucked in so much it wasn't funny.
Hikaru no Go- The premise for the anime is boring. The game itself is actually pretty neat, but fails to hold my interest. The anime, however, is pretty d**n awesome.
Sonic X- Kay, this is pretty cheesy and dumb. But the intro song is catchy. And it's Sonic. And I'm a Sonic fanboy. So therefore I like it. ^_^
Last Exile- I've only seen two eps of this, but it's pretty cool.
Card Captor Sakura- Firstly, I haven't gotten a real chance to see the anime, and have only read the manga so far. But the manga is excellent, cute, funny, and it really draws me in. You guys can yell at me about how cutesy and "gay" it is as much as you want, but if you do then you probably haven't even taken the time to check it out.
There's more, but I'm brain dead right now.
So, what about you guys?

I've seen the english version of Sakura, It by no means engaged in homosexual activity, but I really didn't like it that much. Probably 'cause Fox Kids made another English Escaflowne out of it. Pretty much 100% worse than the Japanese one.
As for my favourites, I've only seen Evangelion, Ninja Scroll and a bit of Hellsing, so I don't think I can realy answer that...

Berserk- it will always remain my favorite, I am absolutely obsessed. It's a fantasy world with a dark and gritty feel, and both the manga and the anime contain a realistic atmosphere to the plot and characters that heightens the drama to everything that happens. The anime is riveting, and the manga maintains a high amount of quality over its massive, ongoing length of 24+ volumes. Utterly engrossing, pulls no punches, and filled with non-stop action with a brain, Berserk is my most recommended anime/manga. Fruits Basket- funny, adorable, and filled with metaphors for emotional insecurity and self-acceptance, FB is a shoujo anime that remains my favorite of the genre. Brilliant characters, great dialogue and fine animation make it worth watching. I laughed out loud and even cried during this show...yes I am STILL A MAN! Get Backers- a fun action show with lots of style and creativity. All around fun action with a decent plot and likable characters, along with great animation and music make this anime a sure-fire hit when it gets licensed and distributed stateside. The manga is great as well. Last Exile- A dramatic story that unfolds in the skies, with airships fighting and deep conspiracies unfolding. It has incredible visuals and music. The characters are a bit weak at first but they are getting better as the show goes on. Hellsing- a stylish show about vampires, what more can be said? ;p Escaflowne- a stunning hit that easily has rights to be the best show of the 1990's. Guymelefs are awesome XD Ebichu- adult show about a house keeping hamster. You probably don't want to know That is all I can really give right now as my favorite anime/mangas....let's see you do better!

Hmm... Only Animes I've been into at the moment are: Inu-Yasha - Pretty good. Haven't been any new eps in a while, so I might download some. Storyline is funny, serious, and a little cliche. Cowboy Bebop - Never gets old for me. No matter how many times I've seen the series If you haven't seen at least one episode, then I don't know you. Slayers - True comedy. Hilarious, funny, witty, whatever. It's great. Too bad its also the hardest for me to obtain. Filled with every cliche in a fantasy setting possible, and it makes fun of ALL of them as well! I might look for some Irresponsible Captain Tyler episodes. From the episode I've seen it seemed pretty good.

Neon genesis: Fantastic, too many plot twists for me though. 8/10
Vampire Hunter D: Pretty good, didn't like the ending. 8/10
Appleseed: Great semi-mecha action. 9/10
Dragon ball GT: Scum of the TV, avoid like a drunk hobo. 0/10
Blue Gender: One of the best animes I've ever seen. 10/10
Ninja Scroll: Awsome fight scenes, 7/10.
Blood: Not bad, too short. 5/10
Ghost in the shell: Fantastic, a little underrated. 9/10
Berserk: only seen 1 ep', it rocked though.
Martian Succesor Nedesico: Too kiddyish for me, it felt like pokemon in space. 2/10
Vampire Wars: Fun for a while, horrible ending. 6/10
X: I liked the fight scenes, awfull voice overs. 4/10
Amon Saga: Fantastic, 'nuff said. 10/10
Neon Genisis Death & rebirth / End of evangellion: Not bad, a bit confusing the first time I saw it.
Akira: Not bad, great the first 3 times I watched it. 7/10
Burn up exess: Ugh, nicely drawn but hideously animated. 3/10
Macross: Pretty funny at times, nice ending, too bad it was cut for video/DVD viewing. 8/10
Shadow Skill: Amazing, not too keen on the blood effects though. 8/10
FFU: Only seen one ep', first impressions; not that chuffed. 7/10
Gunbuster: Pretty d**n good, about 4-5 hours long. 8/10
Bounty Dog: Nice and action-packed. Reccomended. 9/10
Patlabour I & II: Exellent, one of Mamoru Oshii's greatest work. 10/10
Street Fighter Alpha: Great, *whips Matkau* We know we get to see chun-li in the shower *whips again* Down boy!!! 9/10

Well, other than ones people've already mentioned:
Neon Genesis Evangelion - A classic, one of the first anime I saw. If you haven't seen it yet, you really should. Very engrossing and very deep, although it occassionally loses focus and animation quality.
Grave of the Fireflies - A WWII movie following the lives of two children in a devestated Japan. You need to see this movie, even if you hate anime. Predictable anti-war plotline doesn't stop it from being incredibly effective.
Jin-Roh/The Wolf Brigade - A movie set in an alternate history where Japan has fallen into ruin after losing WWII - to Nazi Germany. Some people seem to hate the slightly slow pace, but it's wonderfully animated and the plot is absolutely top-notch.
Rurouni Kenshin Tsuiokuhen (Also known as "Samurai X OVA") - By far the best to come out of the Rurouni Kenshin franchise, this anime covers the swordsman Himura Kenshin's years as an assassin during the Bakumatsu. Extremely dark and serious; the plot is brilliant, the characters are extremely deep, and animation is incredible.
Saishu-Heiki Kanojo / Saikano - Short 13-episode story about a girl who has been modified to transform into an 'ultimate weapon' and her relationship with a classmate. The characters look terrible, but if you want a tragic and depressing anime there aren't many better than this.
Others I'd reccomend: Berserk, Fruits Basket, Hikaru no Go, Last Exile, Cowboy Bebop, Gundam SEED, and FLCL.

Interesting thoughts, I personally think it went a bit too far with the 'deep meaning' and the charactor's thoughs. The last episode of the series was pretty poor, but you did get a good insight of his personality. SPOILER: Highlight to read, not reccomended if you havn't seen it. The best bit was when Rei killed Gendo Ikari. You go girl!

Haven't watched too much lately. It's summer now though, should be able to catch up a bit on some series.
Neon Genesis Evangelion- First serious anime I watched (serious meaning something not on Toonami) and as long as you can take the time to understand it, you should enjoy it. Make sure to pick up Death and Rebirth and End of Evangelion also.
Escaflowne- Nice change of pace from Evangelion's much darker themes. It usually stays pretty light-hearted, and Guymelefs do rock.
X- This is one I'm currently watching, and I like it a lot. Just finished the 5th DVD, and need to get some money to finish it up.
You can't watch it in Japanese?
Beserk- I have to download this, and it isn't exactly easy on Kazaa. So far I got the first 4 episodes, and it is good no doubt.

I should have mentioned Cowboy Bebop as well.
HOWEVER, I decide not to list anime MOVIES, because I think this topic is more suited to series and not single movies like Grave of the Fireflies and Jin-Roh.
After at least 3 years of Evangelion fandom I have come to the stage where the series just doesn't make much of an impression on me. The show has TOO much character analysis, and when that analysis is done it is done in the most boring, cheaply animated way. When ever the pilots trip out and go into their little dream place, I want to slit my wrist or blow my head off just to end the torture of seeing someone sit in a chair or some production scetches flashing by for 10 minutes straight. The character designs are not all that great, and there isn't much of an original style or feel to the show besides the overdramatic character analysis...not to mention that both the TV and Movie endings are the same, except the movie ending had some fight scenes thrown in, and as soon as I saw footage of Japanese people sitting in movie theatres, I knew it was the same old stuff... That's just my rant for the moment. Sure Evangelion has more thought in it than most anime, and sure there is SOME original music in the soundtrack that sounds good, but still, I cannot enjoy an anime that tries to make itself seem deep just by bombadring the viewer with religious symbolism and animation-cutting character studies...that is why I did not list as one I like.

I have to agree with you there, the hero doubting himself was good in small doses, and I liked the idea of;
"You can do it shinji"
"I CAN'T DO IT!!!" *shinji loses*
Rather than most other animes...
"You can do it <Hero name here>" "I can do it!" *hero wins*
Sure this gave a nice twist. Another thought... shinji jerking off to Asuka when she was unconsious was just not needed... >_< Blagh.

I really want to see Evangelion but I just can't find any DVDs for it around here.
I also want to see Blue Seed, Blue Gender, Escaflowne, Macross, and maybe even Love Hina.
Anyways, of the ones that I have seen, I really like Cowboy Bebop, Rurouni Kenshin(the Samurai X OAV was awesome), YuYu Hakusho, Card Captor Sakura, and Gundam Wing. Ronin Warriors was also pretty cool.
