There are a few anime that got me intimately involved with the topic when I had originally started watching. My very first real exposure to anime would probably be Trigun, which is an amazingly good anime series. I bought the DVD at random with money that was burning a hole in my pocket, and god was it worth it.
Another absolute favorite of mine is Cowboy Bebop, both for it's amazing characters, and subsequently, it's amazing music, composed by my goddess, Yoko Kanno.
Having seen these two, I was in the mood for a couple humor anime. Excel Saga is a laughing riot, but you have to be on level with the strangeness that's going on across the screen in order to really enjoy it. Love Hina is probably one of the more interesting plots I've seen.
However, out of all of these, the one I'm following most closely right now, and with the biggest grin on my face, is GTO - Great Teacher Onizuka. Everybody has to see this series JUST ONCE. The main character is the hero-anti-hero Onizuka, who teaches at a high school. Voiced by David Lucas, the same man who did Spike in Cowboy Bebop, Onizuka manages to be funny, preverted, nonchalant, cool, and amazingly impressive all at once. It's a must-see thing.
